Description:

This position is at Naselle Youth Camp located in Southwest Pacific County.

Supervise and participate in large-scale preparation and service of food on assigned shift; Oversee, delegate, and instruct food preparation duties to Cook 1, Intermittent Cooks, and resident kitchen aids; Prepare main entrees, soups, salads, and side dishes; Bake breads, pies, cakes, and cookies and other desserts.

Anticipate and perform preliminary preparation necessary for next day's meals; Assist Food Manager in preparing menus, determining menu requirements, menu rotation and recipe research for 5 weekly menus as well as special diets for medical and religious preferences to meet nutritional requirements; Approve menu changes and alternatives as necessary.

Inspect food being prepared to ensure proper quantity, quality, and handling; Instruct and train employees and resident kitchen help in cooking, preparing, and handling food consistent with health requirements. Ensure daily inspection of refrigerators, freezers, hot carts, steam tables, and milk machine for proper temperature control.

Keep records and prepare reports; Ensure proper inventory levels and documentation.

Operate mixers, ovens, choppers, shredders, steamers, grills, grinders, steam kettles, fry kettles, food processors, and other food equipment; Instruct, delegate and supervise the use of the kitchen equipment.

Ensure cleaning of kitchen, dining area, utensils and equipment.

Maintain kitchen equipment and report repair needs as required.

Supervise youth in kitchen resident culinary program; support case management goals to engage, motivate, coach, validate/reinforce, and redirect youth toward targeted behavior change; Model pro-social adaptive behavior; Recognize and assesses problem situations, and intervene to maintain safety and security within a secure juvenile justice treatment milieu;

Remain calm and in control during crisis/dangerous situations; Perform building integrity checks, key control, and monitor equipment inventory; Alert appropriate JRA personnel to escapes.
