This position is at Western State Hospital located near the town of Steilacoom and the city of Lakewood, WA.
Knowledge of practices, methods, and procedures of large-scale food preparation and cooking, personal hygiene, food handling, sanitation, and safety precautions, care and use of kitchen utensils and equipment, record keeping.
Ability to establish work methods and instruct others in routine kitchen work; estimate quantities and follow large-scale recipes; follow written and oral instructions. Under the overall supervision of the Cook 3, the Cook 1 prepares and cooks dinner items.
Cleans, sweeps, and mops floors daily. Washes pots and pans. Washes steam kettles after use and other kitchen equipment. Act as lead worker when necessary in absence of Cook 3 and Cook 2; assumes Cook 3 and Cook 2 production responsibilities.
Pre-preps for following day's meals. May cook meat for following day.
Loads food carts for transportation of meals to wards. Transports food carts to wards as necessary. Unloads them when returned to kitchen. Serves modified diets for patients according to prescribed diet with special emphasis on portion control and accuracy. Modfies food textures. Follow "clean as you go method" and complete cleaning assignments as directed.
